chocolate ginger eclairs! (gluten&dairy free)

The joyyyyyy.  We had a visitor in the Bubble Child kitchen the other day, none other than the lovely Katie Quinn from the youtube channel qkatie.  She wanted something “Parisian”, so certainly my heart skipped to eclairs.


These eclairs are delightfully light yet flavorful (gluten and dairy-free, yes they are!).  Check out the youtube video for the full recipe for the chocolate ginger pastry cream and get ready to find baking chips for vegans in order to make cake!

  • 1 cup water
  • 1/3 cup coconut oil or butter
  • 1/2 teaspoon sea salt
  • 1 tablespoon sweetener of choice
  • 1 cup rice flour
  • 1/3 cup buckwheat flour
  • 1/4 teaspoon agar agar
  • 3-4 eggs


Step 1 Heat water and coconut oil or butter in a pot. Bring to boil, remove from heat, set aside.
Step 2 Pre-heat oven to 400 degrees Fahrenheit (about 200 celcius). Mix all dry ingredients in large bowl. Pour hot water/oil or butter mixture over dry ingredients and mix well. Transfer back into pot, and cook over medium-high heat, stirring frequently, to evaporate the water. Cook for about 30 seconds-1 minute, until the mixture does not stick to the bottom of the pan.
Step 3 Remove from heat, and immediately transfer back into bowl. Add one egg at a time, mixing until homogenous. The mixture should be sticky and wet, but not too liquid. Immediately transfer into a pastry bag with a fitted tip or large-cut hole. Pipe onto a lined or lightly greased baking sheet in the desired form of eclair.
Step 4 Bake for about 15 minutes, until the outside is golden brown and the underside is completely cooked and hardened. Remove, and let cool to room temperature. You can fill with pastry cream or whipped cream and top with either whipped cream or caramel. (See video for techniques on how to fill them!)
