fennel roasted broccoli


It’s kind of amazing how scrumptious this is for something so ridiculously healthy.  Broccoli sent shivers down my spine when I was a child.  Either I have matured (ha!) or it’s just waaaaaaay way way way better roasted.

Ingredients

  • 1 head broccoli
  • a few tablespoon olive oil
  • 1-2 tablespoon fennel seeds
  • 2-3 cloves garlic (minced)
  • a hearty dash sea salt

Directions

Step 1 Pre-heat your oven to 375 degrees Fahrenheit, or 180 degrees Celcius.
Step 2 Cut your broccoli into florets, and slice into 1 cm thick pieces.
Step 3 Toss all ingredients in a large bowl, and then spread onto a baking sheet.
Step 4 Bake for about 8 minutes, and once the bottom side is colored, flip, and bake for another 5-8 minutes, until cooked through, and not blackened.
Step 5 Either eat hot as a delightful side dish (you can even top it with goat's cheese for the last few minutes of cooking!) or let cool and top a salad with it. Yum yum yum.
