financiers (sugar-free!)

I had a ton of fun making this video.  Financiers are some of my all-time favorite classic French pastries, and unforunately for many people with food allergies they are completely off limites — they’re traditionally concocted with almond flour, and wheat flour.  And butter.  Got a nut, wheat, or dairy aversion?  Good luck!

In addition, the amount of powdered sugar in these things won’t exactly aid your tummy… or your ability to eat the whole tray as you will want to after eating one.

financiersSo, today we’re gonna play in the kitchen replacing the gluten, sugar, and nuts in these things!  The result?  It made me dance.  (And for better or worse, it’s filmed.)

  • 3/4 cup + 1 tablespoons xylitol (can be found online or at your local health store, this is a natural sugar replacement derived from birch)
  • 1/2 cup brown rice flour
  • 3/4 cups coconut or sorghum flour (or can use almond flour if you do not have this allergy)
  • 3 egg whites
  • 3/4 + 1 tablespoons butter
  • a large pinch sea salt


Step 1 Melt your butter in a saucepan until golden browned. Set aside. Pre-heat oven to 370 degrees Fahrenheit.
Step 2 Combine dry ingredients. Whisk in butter. Then whisk in egg whites until homogenous. Set aside.
Step 3 Prepare your molds with butter and flour and spoon the batter into them until just full. Bake for about 10-15 minutes, until tops are golden browned and the insides are cooked.
Step 4 Remove, let cool to touch before eating, and try not to inhale them all at once!
